Description
If you like lasagna and Mexican food, try this Mexican-style tortilla lasagna. This is one of our family favorites with its delicious combination of 2 types of beans, veggies, seasonings and homemade cheese sauce.

Lots of options for personalizing
We personalized this dish in place of our usual enchiladas and it was delcious!
We used a can of green enchilada sauce, a can of black beans, couple handfuls of spinach and onions for the filler. Baked it in a 9x9 pan (we're a small family of 3), so we folded the tortillas in half and tore, then placed 4 halves in the pan with the straight edges against each edge of the pan and the rounded edges toward the center. Layered tortillas and filler a few times ending on the filler. Topped with frozen burger crumbles, baked for 15 minutes then topped with shredded cheese and baked another 10 minutes. Great served with rice and a touch of salsa.
Better than our usual enchiladas, and looking forward to more opportunities to personalize and change it up with extra veggies and different sauces.
