Description
Quinoa (KEEN-wah) is a small grain grown in the high elevations of South America. The Inca people refer to quinoa as the “mother of all grains”. This is an easy and light quinoa salad with mixed veggies and a light dressing of olive oil, lemon juice and apple cider vinegar.

Tasty and healthy
In the past, I've always prepared quinoa warm, like in a pilaf, so I wasn't so sure about a cool salad. This is a seriously good recipe though. I loved it. I served it in wraps as recommended, and thought the wraps made it five stars rather than four...something about the flavor combination was just really good. I should note that I did not add onions or olives b/c I'm not a big fan of either. Will definitely make this again. Also, I'm working to follow the Weight Watchers points system, and one serving (provided you divide into five servings) is just two points. When you add a healthy wrap (also two points), the total is just four points. This will be one of my new lunch faves b/c of the high nutrient, yet low point value.
