Rustic Pesto Potato Salad

Potato salad has a diverse range of styles depending on the country of origin. Some use a light dressing of olive oil and vinegar while others use a richer milk based dressing. While the styles vary the one commonality is potatoes. This rustic (large chunks of potatoes) salad is the lighter variety that features a pesto theme with fresh basil, roasted pine nuts, garlic and green beans.
